Clean eating turkey meatloaf

I know not everyone is a fan of meatloaf but I am. What's not to love? It's basically a big meatball on a plate! Unfortunately though, meatloaf isn't always healthy or tasty. This one is both.


Clean eating turkey meatloaf

Ingredients:
1 large onion, chopped
1 Tbls olive oil
1 tsp salt
1/2 tsp pepper
1/4 tsp. dried thyme
1/6 c. Worcestershire sauce
1/3 c low sodium chicken stock
3/4 tsp tomato paste
2 1/2 lbs lean ground turkey
3/4 c whole wheat bread crumbs
2 eggs, beaten
1/3 c ketchup


Directions:

1. Preheat oven to 400 degrees.

2. In a medium frying pan, cook the onions, olive oil, salt, pepper and thyme over medium-high heat until the onions are translucent (not browned,) approximately 10 min.


3. Add the Worcestershire sauce, chix stock and tomato paste and mix well. Remove from heat and allow to cool to room temperature.


4. Combine the ground turkey, bread crumbs, and eggs. Add onion mixture and mix well.












5. Shape into a loaf on an un-greased cookie sheet. Spread the ketchup on the top.


6. Bake for 45 minutes (until the internal temp is 160 degrees F.) and the meatloaf is cooked through.
