Cranberry Oatmeal Chip Cookies
I'm always on a quest to find new and delicious healthy cookie recipes. This one fits the bill and is totally adaptable. I made it with fresh cranberries and dark chocolate chips but it's easily made into a oatmeal raisin cookie cookie or add dried blueberries, cherries or cranberries.
Ingredients:
1 c. quick cook oats
3/4 c. whole wheat flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/8 tsp salt
2 Tbls coconut oil, melted
1 egg, room temperature
1 tsp vanilla extract
1/2 c. honey
1/4 c. chopped cranberries
1/4 c. dark chocolate chips, rough chopped
Directions:
1. In a medium bowl, mix together the oats, flour, baking powder, cinnamon and salt.
2. In a separate bowl, whisk the coconut oil, egg and vanilla. Stir in the honey until well incorporated.
3. Add honey mixture to the flour mixture and stir just until incorporated.
4. Fold in the cranberries & chocolate chips.
5. Chill the dough for at least 30 minutes in the fridge (cover with plastic wrap if you're chilling it for longer than 30 minutes.)
6. Preheat oven to 325 degrees and line a baking sheet with parchment paper or a Silpat.
7. Drop the cookie dough in tablespoon sized cookies on the cookie sheet. Flatten each slightly and bake at 325 for 12-15 minutes. Cool on the baking sheet for at least 10 minutes (if you're able to resist!) before transferring to a wire cooling rack.
