Baked banana oatmeal cups with chocolate chips

I'm a big muffin person and I love my oatmeal. This is a bit of a cross between the 2. It's definitely not a muffin so if you're expecting a delicious, moist muffin, it is not that. It's more of a baked oatmeal in a muffin tin. 

Easy to make and much easier to transport than it's bowled alternative. Plus I pretty much always have all of these ingredients on hand which is a huge plus for the end of the week when the fridge is getting a little sparse.



Ingredients:
3 mashed bananas (the more ripe the better!)

1 c. unsweetened vanilla Almond milk (any milk would work)
2 eggs
1 Tbls Baking powder
2 Tbls maple syrup (Optional - I didn't add it but you certainly could if you like your "muffins" or oats sweeter)
3 c. whole Old Fashioned oats
1 tsp vanilla extract
3 Tbsp mini chocolate chips

Directions:

1. Preheat oven to 375 degrees.

2. Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans.
3. Line muffin tins and spray inside of liners with non-stick spray.

4. Stir the chocolate chips into the batter.
5. Divide batter into 12 muffin cups. They will be pretty darn full which is what you want.

6. Bake 20-30 minutes, you’ll see the edges just starting to brown and they will be firm to the touch.
Note: The muffins may stick to the liners when hot but are removed easily when you let them cool for a bit.
