No bake zucchini-oat bites

I stumbled across a variation of this recipe a few weeks ago and filed it away to try on a weekend. Well, I finally gave it a whirl last weekend and I'm definitely adding it to my repertoire. One bite is just enough to fill you up and with a few mini chocolate chips thrown in, it's the perfect sweet treat for when the post-dinner munchies get you.
No bake zucchini-oat bites
Ingredients1 1/2 c old-fashioned oats1/3 c sliced almonds, chopped1 Tbsp chia seeds3/4 c almond or peanut butter2 Tbsp plus 1 tsp agave or honey1/4 tsp ground cinnamon3/4 c (packed) grated zucchini (about one medium sized zucchini)
Optional: 1/4 c mini chocolate chips

Directions:
1. In a large bowl, mix together the oats, almonds and chia seeds.
2. Stir in the almond butter, agave nectar and cinnamon until well combined.
3. Place the grated zucchini on a sheet of paper towel and squeeze out the excess liquid. Add the zucchini to the oat mixture.


As you might have guessed, chocolate
chips are a must in my book!
4. Using 1 1/2 tablespoons (packed) of the mixture for each bite, roll the mixture into bite-sized balls. Using a medium-sized cookie scoop makes this process easier. Also, spray your hands with cooking spray to stop the mixture from sticking.
5. Place the granola bites on a baking sheet, cover and refrigerate for 1 hour. Serve.

6. Store the remaining granola bites in an airtight container in the refrigerator for up to 1 week.
