Make your own freezer burritos

I came across a version of this a few months back and then never got myself in gear to make them. I'm home on vacation though and figured why not try it out? Easy to make and, as long as you have some cooked chicken on hand (even easier if you're going vegetarian,) these are a breeze. I had everything I needed on hand in the pantry and a friend on hand to be my taste tester (thanks, Carla!)

Ingredients:
3 c. cooked quinoa (or brown rice)
3 c. cooked, diced chicken (grilled, rotisserie or other)
2 cans black beans, rinsed & drained
2 jars salsa
salt & pepper, to taste
tortillas (Joseph's flax & oat is what I used)
OPTIONAL: shredded cheese, sour cream, cumin (1 tsp) or chili powder (1 Tbls)

* These are easily adapted and made vegetarian. Add sautéed onion, peppers, corn, etc.

Directions:

1. In a large bowl, combine diced chicken, beans, quinoa, and salsa (and cheese if using.) Add salt & pepper to taste. Mix well.

2. Fill each tortilla with chicken mixture, roll, and wrap tightly in plastic wrap (individually.) Freeze.

3. To reheat:

Microwave: Pull out of the freezer and remove the plastic wrap. Wrap the burrito in a paper towel, and microwave (frozen) for 1 1/2-2 minutes, or until heated through. At this point you can add extra toppings if you prefer.

Oven:
 Remove burritos from plastic wrap; rewrap individually in aluminum foil. Place on a baking sheet; bake at 400 degrees for 30-35 minutes. Remove foil, and bake to crisp for another 5 minutes.


4. Enjoy with extra salsa, hot sauce or sour cream.
