Pesto Caprese Grilled Chicken

Inspired by a recipe on Damn Delicious, this baby was delicious and with a few tweaks, it totally worked with our grill-only home. With that said, this can easily be made in the oven and we most certainly will be making it indoors this winter!

Ingredients:
4 boneless, skinless chicken breasts
olive oil
salt and freshly ground black pepper, to taste
1 cup pesto, homemade or store-bought
2 Roma tomatoes, sliced
1/2 cup shredded mozzarella cheese

Directions:

1. Marinate chicken in olive oil, salt and pepper for 30+ minutes. Grill chicken until tender. Remove from grill.

2.  Cut 4 sheets of foil, about 12" long. Add chicken to the center of each piece of foil, top with 1 Tbls of pesto, sliced tomato & mozzarella.

3. Fold the sides of the foil over the chicken, covering it completely, and seal the packets. 

4. Place foil packets back on the grill on medium-low heat. Cook for 5 minutes or until the mozzarella is melted.

Enjoy! We prepared ours with a tomato basil salad but it would taste great with a side of pasta or grilled veggies.

NOTE: If baking in the oven, no need to pre-cook the breasts. Instead, assemble the foil packets all at once and cook until the chicken is completely cooked through, or about 25-30 minutes in a 375 degree oven.
