21 Day Fix Grilled Granola
Did you know that you can GRILL granola?! Seriously! Crazy right?
We're grill crazy over here this summer and this recipe was something I would have never thought to try on my own. Thanks to a little Google searching for grill ideas and this baby popped up. A few modifications to fit my taste buds and meal plan and here you go!
Gluten-free, vegan AND 21 Day Fix approved, and it's super easy to make. Plus there's a ton of possible adaptations you can make to make this work for whatever occasion you need. Today it was my morning snack with a few strawberries and some plain non-fat yogurt but I could easily see this over grilled fruit, vanilla ice cream, you name it.

21 Day Fix Grilled Granola
Ingredients:
2 1/2 cups gluten free rolled oats
1/4 c. sliced almonds (OPTIONAL)
Pinch of sea salt
2 tsp coconut oil, melted
1/8 c. agave, maple syrup or honey
1/8 tsp. Cinnamon
Optional mix-ins (add after cooking): dried or fresh fruit, shredded coconut, chia seeds
Directions:
1. Coat a large piece of tin foil with a generous coat of cooking spray (I used coconut oil spray.) Set aside. Heat grill to medium heat.
2. In a large bowl, mix oats, almonds and salt. Add melted coconut oil and sweetener and stir until incorporated.
3. Pour mixture on tin foil and spread out evenly.
4. Seal tin foil pouch and put on the grill on low-medium heat. Cook for 3-4 minutes before stirring. No need to open the pouch to mix - just shake it and put it back on the grill for another 3-4 minutes before shaking the pouch again. Total cook time is roughly 10-12 minutes. (Be careful not to over cook as the granola and almonds will burn if the heat's too high.)
5. Remove from grill, open and let cool before serving. Extra granola can be stored in an airtight container.
Container count per serving: 1/2 blue, 1 yellow, 1 spoon
