Turkey-Zucchini Meatballs (Whole30-approved)

I'm hooked on zucchini noodles and anything we can prep ahead and throw together with quick sauce during the week is perfect in my book. Call these dinner or a healthy afternoon snack - whatever suits your fancy!

Ingredients: 
1 lb. ground turkey breast
1 egg
1 cup zucchini, grated (squeeze water out after grating)
1/4+ c. almond meal/flour
1 tsp Italian seasoning
2 Tbls dried parsley
1/4 tsp sea salt
1/8 tsp ground black pepper

Directions:

1. Preheat oven to 400 degrees. Line baking sheet with foil & spray lightly with cooking spray.

2. In a large bowl, combine turkey, almond flour, zucchini, spices, and egg. Mix with a fork or your hands.

3. Form into meatballs and place on the baking sheet. Put baking sheet in the oven and bake meatballs for 16-18 minutes.


Serve with unsweetened marinara sauce, over pasta or zoodles. Enjoy!

We're having them as dinner tonight and again for lunch tomorrow. For the kids' dinner, we'll toss them with spaghetti and jarred sauce. Andrew and I are partnering them with sauteed garlic broccolini tonight and with zoodles for lunch tomorrow.

If you're smart and plan ahead, I'd suggest doubling the batch and freezing some for an easy weeknight dinner. You won't regret it!
