Healthy Rice Crispie Treats

Addie and I were on a mission today to find some good, healthy protein sources for her. She's big on fruits and veggies, which is great, but I was emphasizing to her the importance of also getting in her protein every day to keep her body fueled and her brain running for her long days at school.  This was what we came up with and let me tell you, it was a winner in her book! Thanks to Livestrong for the inspiration!

Ingredients
2 Tbls butter
1/3 c. honey
1 tsp vanilla extract
1/4 c. nut butter (I used soy nut butter to make a nut-free snack for school lunches but you could easily use PB or almond butter)
***1 scoop Whey protein powder (I used Cellucor peanut butter marshmallow but you could use vanilla, cinnamon roll, chocolate or whatever meets your fancy.)
1 1/2 c. Rice Crispies
1/2 c. whole rolled oats

OPTIONAL: rainbow sprinkles (Why? Why not!)

*** UPDATE: We have since experimented with vanilla protein powder to make it nut-free. If you want an extra dose of protein it holds up well to 2 scoops of protein powder. This week we got a little more experimental in a quest to make it healthier and we subbed out the protein powder for 2 scoops of chocolate Shakeology. Addie gave it 2 thumbs up so win-win - chocolate, nut-free AND with all of the extra nutrients that come in Shakeology. :)

Directions
1. Spray a 9x9 baking pan with cooking spray and set aside.

2. In a large pot over low heat, melt the butter. Then stir in the honey, vanilla and nut butter. Stir until combined.

3. Turn off the heat and remove from the burner. Stir in the protein powder, oats and rice crispies. Mix well to coat.

4. Press the mixture into the pan and let cool. If kidding it up, add sprinkles or whatever meets your kiddos' fancy. Enjoy!
