Seriously easy freezer oatmeal

I'm an oatmeal lover. There's just something comforting about a warm bowl of oatmeal in the morning but I so rarely have the time to make it fresh each day. This is the perfect, quick and easy option. Make a batch on the weekend and you're good to go all week. Just pop 2-3 in the microwave, add in some fresh fruit, nuts, or chia seeds and you're good to go with a healthy breakfast. Enjoy!

Ingredients:
6 cups water
1/4 tsp. sea salt
1 1/2 c. steel cut oats
2 tsp. cinnamon
5 Tbls pure maple syrup

 Directions:

1. Bring water and salt to a boil.

2. Add oats, stir, and reduce heat to a simmer. Cook for 30 min or until water is absorbed. If necessary, cover.


3. Remove from heat. Add cinnamon & syrup, stir.

4. Scoop oatmeal into lightly greased muffin tins. It should make 18 muffins.


5. Find space in your freezer (this was by far the most challenging part of the whole process!) and freeze for 30+ min.

Clearly we have an ice cream problem...

6. Remove from freezer and use a butter knife to pop the oatmeal hockey pucks out of the muffin tin. Place into a freezer friendly ziploc bag and store in the freezer until you're ready to eat.

 

TO REHEAT:

Simply remove 2-3 oatmeal cups, put them in a bowl and microwave for 2-3 minutes. Add your favorite toppings and enjoy!
