Zucchini Oat Chocolate Chip Cookies
A snow day concoction courtesy of my weekend binge. I wanted cookies but didn't want to go too over the top so here's yet another "healthy cookie" recipe. Addie tested and approved. :)
Ingredients:
2 Tbls unsalted butter, softened
1 ripe banana, mashed
1/4 c. Stevia/Truvia
1/3 c. honey
1 tsp vanilla extract
1 egg
2 c. flour (I used 1 c. wheat flour & 1 c. oat flour)
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. finely shredded zucchini (1 med. zucchini)
2/3 c. dark chocolate chips
OPTIONAL: 1/2 c. chopped walnuts
Directions:
1. Preheat oven to 350 degrees. Cream butter and sugar. Add banana, honey, vanilla & egg. Mix to combine.
2. Add dry ingredients (flour through cinnamon) and mix.
3. Stir in zucchini and add choc. chips & walnuts.
4. Drop by spoonful onto a greased baking sheet. Bake at 350 degrees for 12-15 minutes. Let cookies cool on baking sheet before moving to cooling rack.
