CROCKPOT CHALLENGE ROUND 2 - Day 6: Crockpot Oatmeal Quinoa

I'm always on the lookout for easy breakfast ideas and this time of year I seem to gravitate towards oatmeal. This one seemed like a perfect way to get my beloved oats while also working in the ever-healthy quinoa. 

Crockpot Oatmeal Quinoa:

Ingredients:
3/4 c. steel cut oats
3/4 c. quinoa
2 Tbls honey
1 tsp vanilla extract
1/2 tsp salt
3 c. water
3 c. unsweetened vanilla almond milk
OPTIONAL: 1 c. chopped dried apricots
Toppings: chopped almonds, honey, fresh berries, milk, chia seeds
Directions:

1. Combine the oats, quinoa, honey, vanilla, salt, milk and water in the slow cooker. If adding dried apricots, add them in now. Stir to dissolve the honey and mix everything up.

2. Set the slow cooker on its lowest setting (LOW or 8-10 hours), cover, and leave overnight.
3. In the morning or after about 8 hours, remove the lid and stir to re-incorporate all the ingredients. Scoop oatmeal into bowls and top with about 2 Tbls chopped nut and whatever other fixings you'd like.
