Easy Parmesan Chicken

I was looking for easy weeknight dinner ideas that were quick to cook and 21 Day Fix approved. This one fit the bill! With a few adjustments, it was ready in 10 minutes and tasted great.

Disclaimer: the kids didn't eat it (no spinach for them!) but they did eat the spaghetti that we partnered with it.

Easy Parmesan Chicken:

Ingredients:
2 Tbls olive oil
6 cloves garlic, minced
2 boneless chicken breasts, chopped into bite size pieces
Salt & pepper, to taste
¼-1/2 c. parmesan cheese, grated
2 c. spinach, rough chopped
1/2 c. cherry tomatoes, halved

Directions

1. Heat oil over med-high heat. Add garlic and saute for a minute or two.

2. Add chicken, salt, and cook until no longer pink in the middle. Make sure the chicken cooks through and gets coated with garlic and oil.


3. Add parmesan cheese and stir until the chicken is coated.


4. Add spinach & cherry tomatoes and cook until wilted.


5. Serve by itself (perfect if you're short on yellow containers on the 21 Day Fix!) or over pasta or zoodles.
