Turmeric Roasted Sweet Potato Fries

This was a quick weekend experiment turned so delicious that I may have eaten all of the fries I'd prepped for the week while waiting for them to cool. Oops! Wound up having to make a second batch for the week's lunches. Not a bad problem to have!

Turmeric Roasted Sweet Potato Fries

Ingredients:
1/2-1 tsp. ground turmeric
1/2 tsp. Trader Joe's 21 Seasoning Salute
1 Tbls. avocado oil (or olive oil)
Salt & pepper to taste
3-4 sweet potatoes, peeled & sliced into "fries"

Directions:

1. Preheat oven to 425 degrees and line a baking sheet with parchment paper.

2. Peel and slice sweet potato into long, skinny "fries" - you want them about a 1/4-1/2 inch thick at most.

3. Toss sweet potatoes with oil & seasoning and spread out on baking pan. Make sure fries have space to bake - they'll crisp up better if they have some space. 

4. Roast for 20-25 minutes, flipping them at the halfway mark. Enjoy right off the pan, as a side dish for dinner or do what I do and prep a bunch ahead of time and portion them out for the week for lunches!
