Dark Chocolate Cookie Dough Bars (GF/DF)

Need I say more? Anything coated in dark chocolate is good in my book. 

Think cookie dough frozen with a layer of melted chocolate on top. Drool worthy. 

This is one of those perfect "I need something sweet to change the taste in my mouth" after dinner kind of treats. I've been making a big batch and storing them in the freezer for when those chocolate cravings hit and my sweet tooth is thanking me.

Dark Chocolate Cookie Dough Bars

Ingredients:
Cookie dough layer:
2 c. almond flour
3 Tbls. coconut flour
1/4 c. coconut sugar
3 Tbls. melted coconut oil
1/2 c. plus 2 Tbls. nut butter
1/4 c. dark chocolate chips

Dark chocolate layer:
1 c. dark chocolate chips
2 Tbls. coconut oil
Sea salt flakes (optional for topping)

Directions:

1. Line an 8x8 baking dish with parchment paper or grease it.

2. In a medium bowl mix almond flour, coconut flour, sugar and mix well.

3. Add nut butter & melted coconut oil and stir until combined. Mixture will be a little lumpy.

4. Fold in dark chocolate chips.

5. Press cookie dough mixture firmly into baking pan. Put baking pan in the freezer.

6. Melt chocolate chips with coconut oil in the microwave on low heat (make sure to stir as you heat it to avoid scalding the chocolate.) 

7. Pour melted chocolate over the cookie dough layer (if you like that sweet & salty flavor, sprinkle chocolate layer with sea salt) and refreeze. 

8. After bars are set (about 45 minutes), cut up into pieces and store in freezer until you're ready to eat.
