Grain-free Granola (GF)


 This came about during a round of Whole30. It's hard finding sugar-free, grain-free granola! It's certainly getting easier than it once was but honestly, I loathe buying something from the store that I can easily make at home and make it to fit my liking.

This is one of those switch it up every time kind of recipes. I pretty much always have nuts and dried fruit of some variation in the house so it's an easy make-ahead snack for the week. Some days I grab a handful to snack on as is, other days I throw it over a bowl of unsweetened apple sauce or some plain yogurt.

Grain-free Granola

Ingredients:
1/2 c. chopped cashews
1/2 c. chopped walnuts
1/2 c. pumpkin seeds
1/2 c. sunflower seeds
1/2 c. diced dried fruit (apricot, dates, cranberries- all unsweetened)
2 Tbls. shredded coconut
2 Tbls. chia seeds
2 Tbls coconut oil
1 tsp vanilla
1/2 tsp cinnamon
1-2 egg whites (beaten until frothy) 

Directions:

1. Preheat oven to 300 degrees and line a baking sheet with parchment paper.

2. Add nuts/fruit to a bowl & stir. Add in coconut oil, vanilla and cinnamon and mix well.

3. Pour nut/fruit mixture onto on a baking sheet lined with parchment. 

4. Whisk egg whites until frothy, pour over nut mixture and stir to coat. 

5. Bake for 35-40 minutes at 300 degrees. Turn over granola halfway through and if you like it in smaller chunks, break them up as you toss it.
