Clean Eating Cranberry Relish
A little belated for the holiday but perfectly timed for all of those Thanksgiving leftovers. This healthified version of cranberry sauce is perfect in place of the sugar-laden version. Super easy to make and MUCH healthier than it's canned or homemade sugar-filled sister.
Perfect on Thanksgiving leftover sandwiches too!
Ingredients:
1 cup fresh cranberries
6-7 fresh pears or apples, peeled and chopped
1 tsp ground cinnamon
a pinch of cloves
1/2 cup honey, agave or brown sugar lightly scooped (not packed tightly)
1 cup fresh cranberries
6-7 fresh pears or apples, peeled and chopped
1 tsp ground cinnamon
a pinch of cloves
1/2 cup honey, agave or brown sugar lightly scooped (not packed tightly)
Directions:
1. Combine all ingredients in the slow cooker. Cover and cook on high for 2 hours.
2. Use and immersion blender to purer mixture until smooth.
3. Cook uncovered on high for 3-4 hours, stirring occasionally until very thick.
4. Transfer to an air tight container, cover and refrigerate.
Enjoy spread on your Thanksgiving sandwiches, slathered over your turkey or just with a spoon because it's just that good! ;)
