Pumpkin Apple Steel Cut Oats
A big thanks to my friend Rachel for this idea. It started as an experiment and in the end is the most scrumptious fall treat I've had in a while. Think pumpkin marries apple marries warm toasty oats. Perfection for those fall mornings.
Ingredients:
1 1/2 c. steel cut oats
2 diced apples
1 (15 oz) can of pumpkin puree
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. water
4 c. unsweetened vanilla almond or coconut milk (optional - if you'd rather skip the milk, substitute with water)
OPTIONAL: add chopped walnuts into the crockpot, top with sliced almonds to serve, mix in 1 tsp. pure maple syrup to lightly sweeten when hot. If you're looking to up your protein, mix in a scoop of vanilla protein powder.
Directions:
1. Spray the inside of the crockpot with non-stick spray.
2. Add oats, cinnamon, nutmeg, apples, pumpkin, water and almond milk. Mix until combined.
3. Cover and cook on low for 3 hours. Enjoy!
