Blueberry orange muffins
This was a Pinterest experiment that I tweaked a little bit that actually came out good (TOTALLY not always the case with Pinterest!) Enjoy!
Ingredients:
1 c. flour
1 c. whole oats, plus more for sprinkling
1/2 c. brown sugar, packed
1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 c. (1 stick) unsalted butter, melted and cooled
1 c. plain Greek yogurt
1 large egg, beaten
1/2 tsp vanilla extract
1 c. blueberries
Zest of 1 orange
Directions:
1. Preheat oven to 400 degrees F. and line a muffin tin with paper
liners; set aside.
2. In a large bowl, combine flour, oats, brown sugar, cinnamon,
baking powder, baking soda and salt.
3. In a large glass measuring cup or another bowl, whisk together
butter, yogurt, egg and vanilla.
4. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
5. Add blueberries and orange zest and gently toss to combine.
6. Scoop the batter evenly into the muffin tray. Sprinkle with
oats.
7. Place into oven and bake for 15-18 minutes, or until a tester
inserted in the center comes out clean. Remove from oven and cool on a wire rack.
