Peanut butter banana muffins
This all started with me trying to figure out how to use the overly ripe bananas lying on my kitchen counter. It ended with a delicious experiment gone right. Perfect for an evening snack with tea or breakfast on the run!
Peanut butter banana muffins
Ingredients:
3 ripe bananas, mashed
1/2 c. peanut butter (you could also use almond butter or soy nut butter)
2 egg whites (or 1 whole egg if you're a yolk person)
1 tsp vanilla extract
1/4 c. honey
1/2 cup apple sauce
1 scoop vanilla protein powder (OPTIONAL - If you choose to omit it, add roughly 1/4 c. flour to the flour amount below)
1 1/4 c. whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
OPTIONAL ADDITIONS:
1/2 c. dark chocolate chips
1/2 chopped nut of your choice
top with chopped peanuts
Directions:
1. Preheat oven to 350 degrees. Line or spray muffin tins.
2. Mash bananas. Mix bananas, pb, egg, vanilla, honey and apple sauce together.
3. Add dry ingredients to wet and mix well.
4. Pour into muffin tins and bake for 18-20 minutes.
Makes about 15 muffins (Little A. was eating batter as I was trying to fill the muffin tins so if you don't have a hungry assistant, you might get more than 15!)
