Buffalo Chicken Meatballs

I saw a rendition of these on Pure Wow a few months back and filed them away to try at some point. Yesterday was that point. The older 2 kids are big buffalo wing lovers so I figured I'd give it a whirl. They're as good as they sound and so much neater than wings! I like my sauce like the next guy but I have never been big on food that gets all over your fingers. 

* Note: if you're not a big buffalo sauce person, this is VERY easily made into whatever flavor you'd like. Make the chicken meatballs and then dip in whatever sauce you'd like. Honey mustard, sweet chili, etc. would all work - whatever floats your boat!

Ingredients:
1 celery stick, diced
1 small onion, diced
1 lb. lean ground chicken
1 egg
1 tsp. salt
1/2 tsp pepper
1 c. whole wheat bread crumbs
olive oil spray
3/4 c. buffalo sauce (Franks is the best!)
Blue cheese dressing (OPTIONAL)

Directions:

1. Spray small fry pan with olive oil sptray, saute celery and onion over medium heat until softened. Set aside to cool.

2. Mix egg, chicken, salt, pepper and cooled celery & onion until combined.



3. Add bread crumbs, mix until combined.

4. Roll into small meatballs.



5. Heat and spray large fry pan with oil. Brown meatballs in pan.



6. Coat cooked meatballs with hot sauce and transfer to a cookie sheet. Bake meatballs in 400 degree oven for 10 min.

7. Serve with blue cheese dressing, celery & carrot sticks. Enjoy!
