Chocolate Cake Donuts

I'm not usually this ambitious when it comes to baking and frankly am stubborn about not buying specialty baking pans or tools. This was worth the $10 for pans and much easier than I would have ever thought donuts could be. No frying or crazy baking - just a mixing pan and baking sheet and 10 minutes in the oven. PLUS they're so much healthier than the donut store alternative and the kids loved them. I'm adding this to our school snack rotation!

Chocolate Cake Donuts

Ingredients:
2 1/2 c. Kodiak Cake dark chocolate power cakes flapjack and waffle mix
2 eggs
1 c. unsweetened vanilla almond milk
1/2 c. coconut sugar
1 Tbls melted coconut oil

Optional chocolate drizzle: 1/2 c. dark chocolate chips & 1 Tbls coconut oil 

Directions:

1. Preheat oven to 350 degrees.

2. Combine all donut ingredients in a bowl and mix until incorporated.

3. Grease donut pan with coconut oil.

4. Scoop batter into donut pan. Fill 2/3 full. (If you have a pastry bag it makes filling the donut trays MUCH easier. You can also replicate by cutting a small hole in the corner of a ziploc bag.)

5. Bake for 10 minutes or until a toothpick inserted in the center comes out clean.

6. Let cool on a rack before frosting/decorating.

Optional chocolate drizzle: combine chocolate/oil in bowl and heat in 30 second increments in the microwave, stirring between. Drizzle over cooled donuts.
