Cilantro Lime Rice

 My current go-to for salad grain, fajita side dish and just plain easy to whip up on the weekend for weekday meals. Enjoy!

Cilantro Lime Rice

Ingredients:
1 1/2 c. brown basmati rice
1 bay leaf
1 Tbls lemon juice
1 Tbls lime juice
1 Tbls chopped cilantro
1 Tbls olive oil
Salt and pepper, to taste

Directions:

1. Boil water in a medium pot. Once boiling, add rice and bay leaf, stir and bring back to a boil. Cook for 30 min uncovered. You may need to reduce the heat a little to keep it boiling but to avoid the water evaporating too quickly.

2. While the rice cooks, prep the cilantro and cut the lemon and lime for juicing.

3. Once the 30 min is up, remove pot from the stove, drain any remaining water and then cover the pot and set it aside (NOT on the hot burner you just used) and let it steam for 10 minutes. 

4. Uncover the pot, fluff the rice with a fork and remove the bay leaf. 

5. Squeeze in the lemon and lime, add the olive oil and season with salt & pepper. Stir, taste and if necessary, adjust the salt/pepper.

Enjoy as is, store in the fridge for up to a week or, if you're a planner, freeze in individual sized containers for mid-week meals.
