Instant Pot Quinoa


 While I'm still figuring out how to best use my Instant Pot, I'm all about finding those recipes that can be made more quickly and easily in there and this is one of those.

Between the rinsing/soaking, the timing and fluffing to get it just right, quinoa can be a pain to make. Doing it in the IP speeds things up a bit in the hands-on department. While it still takes about the same amount of time start to finish, once it's in the pot you're hands-free until it's ready to eat.

Pro tip - double the recipe and freeze in individual servings for quick weekday option.

Instant Pot Quinoa

Ingredients:

1 c. quinoa
1 c. water

Directions:

1. Soak quinoa in cold water for 10-30 min. Rinse in cold water and add to the Instant Pot.

2. Pour in water, cover and make sure the vent is closed. Turn on "Rice" setting and you're done!

3. When the cook time is done, vent it (be careful not to burn your hand on the venting steam,) remove the lid, fluff with a fork and enjoy!
