Ultimate Reset Quinoa Salad
Andrew lived off of this for lunch when we did the Ultimate Reset and our friends still have this in their weekly rotation of foods so you know it's good.
Ingredients:
1/2 c cooked quinoa
1 Tbls extra virgin olive oil
salt or Braggs Liquid Aminos, to taste
1 Tbls fresh lemon juice
2 Tbls finely minced fresh parsley
1 Tbls finely minced fresh mint leaves
1/4 large ripe tomato, diced
1/2 large cucumber, peeled and diced
2 Tbls chopped, pitted Kalamata olives
Directions:
1. Toss quinoa with olive oil, salt or Braggs, and lemon juice. Mix well.
2. Gently fold in parsley and mint, followed by remaining ingredients.
3. Cover and chill for an hour. Serves 1.
