Pumpkin Protein Pancakes


There’s nothing better than warm pancakes on the weekend (or for a mid-day snack or an early morning breakfast or… you get the picture.) These are a version of Jamie Eason's pancakes found on Bodybuilding.com so you know they are healthy AND delicious!

Pumpkin Protein Pancakes

Ingredients:
1 ½ oat flour (I measure 1 ½ cups of whole grain old fashioned oats and puree them in the blender)
1 c. whole wheat flour
1 scoop of protein powder (I use either Trader Joe’s vanilla whey protein powder or cinnamon roll protein powder which is also yummy)
2 Tbls agave or honey
1 Tbls baking powder
½ teas salt
2 Tbls ground cinnamon
½ teas allspice
¼ teas ground nutmeg
4 egg whites
1 cup raw pumpkin
1 ½ cups unsweetened vanilla almond milk

Directions:

1.     Mix all of the dry ingredients together.


2.     Whisk the egg whites and pumpkin together. Add the almond milk to the egg mixture and stir well.



3.     Add the wet to the dry ingredients and mix well.



4.     Ladle evenly onto prepared griddle/pan. Makes approximately 18 pancakes.
