Parmesan crusted chicken tenders
This is super easy to make, way healthier than store-bought breaded chicken and yummy. Addie made this for dinner last week with spaghetti and it was the perfect kid-friendly meal.
Ingredients:
1 1/2 lbs boneless chicken tenders
1 c whole wheat breadcrumbs (or if you're not quite on the whole wheat bandwagon yet, do 1/2 c. panko, 1/2 c. wheat breadcrumbs)
1/4 c. grated parmesan cheese
salt & pepper to taste
Italian seasoning (only if the breadcrumbs are plain)
1 tsp lemon zest (OPTIONAL)
2 eggs
Directions:
1. Preheat oven to 375 degrees. Lightly coat baking sheet with olive oil spray.
2. Crack 2 eggs into small bowl, mix well to break up yolks.
3. Put breadcrumbs, cheese, salt & pepper, lemon zest in another small bowl.
4. Dip chicken in egg, then breadcrumb mixture. Place on greased baking sheet.
5. Bake for 12-15 minutes. Turn over chicken halfway through to get both sides lightly toasted in color.
Serve with a side salad, pasta or a vegetable of your choice.
