Healthy salad dressings

While store bought is certainly easy, they're not always healthy. It's super easy to make your own and if you make it in bulk, you can store it in an air-tight container in the fridge and you're good to go for a while. Give one a try!

Greek Dressing

Ingredients:
1/2 c extra virgin olive oil
1/4 c red wine vinegar
1 Tbls balsamic vinegar
1/4 c fresh lemon juice
2 tsp dried oregano
1 clove garlic, crushed
1 tsp Dijon mustard
1/2 tsp salt
1 tsp herbal seasoning
2 Tbls chopped fresh parsley

Directions:
1. Place all ingredients in a blender and blend on medium-high for 2 minutes until well-mixed.
2. Refrigerate in air-tight container. If dressing solidifies when cold, let it sit at room temperature until liquid and then stir. Serves 8.


Ginger-Sesame Miso Dressing

Ingredients:
2 Tbls miso paste
1/4 c rice vinegar
1 Tbls Bragg Liquid Aminos
1/4 c toasted sesame oil
1 tsp minced ginger root
water (as needed)

Directions:
1. Place first 5 ingredients in a blender and blend on medium-high for 30 seconds or until well-mixed, adding water as needed for desired consistency. Store in air-tight container in refrigerator. Makes 8 servings.


Basic Vinaigrette

Ingredients:
1/2 c extra virgin olive oil
1/4 c red wine vinegar
1 tsp salt
1 tsp ground black pepper
1 tsp unfiltered honey or raw agave
2 Tbls fresh lemon juice
Optional: 2 tsp fresh herbs (basil, oregano, parsley, dill)

Directions:
Mix all ingredients together. Serves 8.


Creamy Garlic Dressing

Ingredients:
1/2 c extra virgin olive oil
1/4 apple cider vinegar
3-5 cloves garlic, crushed
3 Tbls fresh lemon juice
2 Tbls chopped fresh parsley
1 tsp salt
1/2 tsp Dijon mustard
1 Tbls unfiltered honey or raw agave

Directions:
1. Place all ingredients in blender and blend on medium-high for 30 seconds or until well-mixed.
2. Store in air-tight container in refrigerator.  If dressing solidifies when cold, let it sit at room temperature until liquid and then stir. Makes 8-10 servings.
