Chewy Chocolate Chip Oatmeal Breakfast Cookie
This recipe was circulating around the web last year in a couple of different forms. It's a great way to use up bananas that are getting a little too ripe (although you certainly can freeze them which is a great addition to a shake!) and to get a little chocolate fix in the AM. Can't go wrong there!
Chewy Chocolate Chip Oatmeal Breakfast Cookie

Ingredients:
2 medium ripe bananas, mashed
1 cup of uncooked quick oats
¼ cup chocolate chips
Directions:
1. Preheat oven to 350°F. Spray a non-stick cookie sheet with cooking spray or use a Silpat.

2. Combine
the mashed bananas and oats in a bowl.
3. Fold
in the chocolate chips and place a tablespoon of each on the cookie sheet.
4. Bake
for 15 minutes. Makes 16 cookies.
