Black beans & rice tortilla

This was hands-down our favorite Ultimate Reset recipe and is one that we've returned to often since.

Ingredients:
3/4 c cooked brown rice
1/2 c canned low sodium black beans
1/2 tsp extra virgin olive oil
1/8 tsp ground chili powder
1 pinch ground cumin
1/4 tsp ground coriander
1 tsp Braggs Liquid Aminos
salt to taste
Optional: 1/4 c. corn, salsa, guacamole, corn or whole wheat tortilla


Directions

1. While rice is cooking, heat beans gently in a saucepan until very hot.

2. Drain beans and return to pan. Add oil, spices, aminos and salt. Stir well.

3. Gently fold beans into cooked rice.

4. Eat alone or serve in a corn tortilla with 1/4 c. fresh or frozen cooked corn, 2 Tbls salsa, 1/4 c. guacamole/avocado.
