Peanut butter oatmeal chocolate chip cookies - clean and gluten free!

These cookies were inspired by a conversation I had today about stress baking. Apparently I'm not alone in my need to channel my stress into cooking! One mention of peanut butter oatmeal cookies and the seed was planted. I HAD to make them. It would have been wrong not to. ;)

Ingredients:
4 eggs
3 tsp vanilla extract
2 cups peanut butter (creamy or chunky) - any nut butter would work
1 1/3 c. dark brown sugar, packed
1 1/3 c. rolled oats
2 tsp baking soda
1 1/3 c. chocolate chips

NOTE: 
* If using unsalted natural PB, adjust accordingly and add in salt as needed. 
* Any nut butter would work in place of peanut butter.
* You can scale back on the sugar and choc. chips to 1 c. each - the cookies will be slightly less sweet (and lower calorie!)

Directions:

1. Preheat oven to 350 degrees.

2. Mix peanut butter, eggs, vanilla and sugar until smooth.


3. Add oatmeal and baking soda and stir with a wooden spoon until combined. Fold in chocolate chips.

4. Spoon cookies on to cookie sheet by the tablespoon. Lightly flatten to top with your hand.


5. Bake for 9-11 minutes, until the edges begin to lightly brown. Remove from oven and let cool on cookie sheet for 2 minutes before transferring to a cooling rack to cool completely. Enjoy!

Yields: 30-32 cookies
