4 Ingredient Ice Cream


I'm all about desserts that aren't really desserts. This one tastes like ice cream but in the grand scheme of things is super healthy so win-win! Found a version of this on Pinterest and experimented with it tonight and it's a keeper.

Easily modified to fit your taste buds and the fruit you have in the house. Also easy to add mix-ins (think shaved unsweetened coconut, chopped nuts, dark chocolate chips, etc.)

Ingredients:
1/2 c. frozen strawberries
2 frozen bananas
1/2 tsp vanilla extract
1/4-1/2 c. unsweetened vanilla almond milk

Directions:

1. Freeze banana slices on a place (or do what I do and throw your overripe bananas in the freezer as is and thaw them for 30 sec. in the microwave when it's time to use them.)

2. Remove strawberries and bananas from the freezer and place in the blender or food processor. Add vanilla and 1/4 c. almond milk. Blend until it's the consistency of soft serve. Adjust almond milk as needed to achieve the desired consistency.





3. If you like your ice cream thicker, transfer to a bowl and freeze until solid. Scoop and serve!
