CROCKPOT CHALLENGE DAY 3: Clean eating pulled BBQ chicken

Little A. and I are big pulled chicken fans so this is one of our favorites. Super easy for a weeknight, even easier when you're entertaining (think BBQ or football), this one is definitely one to keep in the rotation.

Pulled BBQ Chicken

Ingredients:
3-4 skinless boneless chicken breasts
1 c. no salt added tomato ketchup
2 Tbls. apple cider vinegar
2 Tbls. pure maple syrup
1 Tbls. classic yellow mustard
1 tsp. onion powder
1 tsp. ground black pepper
1/2 tsp. ground cumin
1 tsp. garlic powder
1 tsp. Tabasco (OPTIONAL)
1 small onion, diced (OPTIONAL)

Directions:

1. Place the chicken breasts in the crockpot.

2. Mix together all of the remaining ingredients and pour over the chicken.

3. Cook on low for 6 hours.

4. When done, using 2 forks, shred the chicken and mix well with the sauce. 



Easy weeknight tip: Make the BBQ sauce the night before, throw it in a tuperware in the fridge and then just pour it over the chicken in the AM, turn on the crockpot and you're ready to go!
